Vinification: Fully manual production process. manual harvesting of the grapes in boxes of 2/3 kg each and withering for 18 days. Destemming by hands of the grapes. Manual “pressing” of the grapes Maceration and alcoholic fermentation in new French oak barrels until the sugar has been depleted naturally and manual racking. This is followed by maturation in first passage barriques for 28 months then assembly of the wine and bottling. Aging in the bottle for 12 months takes place in our tunnels dug into the tuff 15 meters underground before being placed on the market.
